Vincenzo Castaldo is the Chef-owner of VILLA GRUSONE, in Massa Lubrense. a very exclusive Luxury property, known as temple of contemporary gastronomy and comfortable rooms.
A native Italian, Vincenzo began his culinary career in his hometown of Napoli, Italy in 1996 and has worked in top fine-dining restaurants in Portugal and the U.S.
Vincenzo brings with him over 20 years of international culinary experience. His encounter with chef Alfonso Iaccarino began in 2004 when he worked as the Chef de Partie for a year at the two-star Michelin Don Alfonso 1890 restaurant in Napoli, Italy.
In early 2006, Vincenzo moved back to U.S. and trained for several months under the famed Thomas Keller, founder and chef of The French Laundry, a three-star Michelin restaurant in Yountville, the culinary capital of Napa Valley. He also cooperated with well-known worldwide restaurant, like “Mugaritz” in Spain, “Fat Duck”, in UK and “Tetzuya”, in Sydney.
After his traineeship around the world, Vincenzo rejoined Don Alfonso in mid-2006 and was assigned to work as the Chef de Cuisine onboard the Master Yacht Christina Onassis, a luxurious private yacht owned by the Onassis family. Later that year, he joined Baby Restaurant as Chef de Cuisine, a one-star Michelin restaurant in Rome, Italy. In early 2009, Vincenzo moved to China to manage a fine-dining Southern Italian restaurant located at the Grand Lisboa Hotel in Macau.
In 2014, Vincenzo was promoted to Executive Chef at Don Alfonso 1890 and supported the team of Don Alfonso 1890 Shangri La - Dubai. The following year, he returned "home" to the original Don Alfonso 1890 in Sant’Agata sui Due Golfi.
In 2018, Chef Vincenzo left Iaccarino family and stared his journey as consultant chef on his own. During this period, the chef has performed has Food Director of “The Heritage Collection” achieving great results, proving upscale service for top VIP guests.
Vincenzo holds a degree in Hospitality – Food and Beverage from the IPSSAR “I.CAVALCANTI” in Napoli, Italy, and a Sommelier certificate from the Association Italian Sommelier in Rome. He is fluent in Italian, English and Spanish.
